Dryad’s Saddle on Beech tree.


On 16th April 2019 Mario was called to cut the tree affected by some sort of white fungus growing from inside of the tree trunk.

Three months later to our surprise we were lucky enough to find out that this white fungus was a Dryad’s Saddle Mushroom.

Beautiful and interesting species. It is largest cape mushroom in the U.K., growing up to 60 cm in diameter. And is edible.

When is young and soft is perfect to just fry with butter on the pan or marinade them. Older species and tougher parts can be dried and they make perfect stock when powdered.

Yound ones taste a bit like watermelon, when older very nice pleasant mushrooms smell and taste.
